While reprocessing nectar to honey, bees are inserting their salivary glands enzymes to nectar and increasing this way the value of honey even more.
Depending on the year, honey harvested from exactly the same place may be lighter or darker.
The color depends on the amount of floral glucose in honey. The color of honey also depends largely on the plants from which the honey was harvested. For example, dandelion, thistle, canola and many herbs grown in meadows provide completely white honey.
